Sugar-free oat yogurt biscuits
Biscuits are a classic treat that can be found in a lot of variety. They are perfect for an afternoon snack with coffee or even a small dessert.
The recipes we share in this article do not contain sugar or artificial sweeteners, meaning these biscuits are a little different from the traditional ones. We give two recipes: one is sugar-free and the other is sweetened with honey.
Both versions are nutritious as they are made from oats and yogurt, two healthy ingredients. Taste!
The first recipe
Ingredients
- 200 g of oatmeal
- 4 eggs
- a pinch of salt
- 45 g unflavoured yoghurt (thick)
- 1 teaspoon olive oil
- 1 teaspoon vanilla extract
- powdered cinnamon
This is how sugar-free oat-yogurt biscuits are made
- Preheat the oven to 180 ° C.
- Whisk the eggs and vanilla extract in a bowl with a whisk. Gradually add the yogurt while stirring.
- Add the olive oil and salt to the mixture and continue mixing.
- Then add the oatmeal and cinnamon and continue to stir. The result should be a slightly loose dough that can be shaped, however.
- Grease the baking sheet and shape the dough into biscuits. Since the dough is a little loose, you need a spoon to help lift the dough. Shape the dough into a biscuit shape either by hand or with a spoon.
- Put the tin in the oven and bake for 15-20 minutes until the biscuits are golden brown.
- Take it out of the oven, let it cool and enjoy!
Another recipe: honey oat-yogurt biscuits
Ingredients
- 200 g of unflavoured yoghurt
- 100 g of oatmeal
- 3 tablespoons butter or margarine
- 100 g of oatmeal
- 2 eggs
- 1 teaspoon baking powder
- 5 tablespoons honey
Manufacturing
- Bring the oven to 200 ºC.
- Add room temperature butter and honey to a bowl and mix well.
- Add oatmeal, oatmeal and baking powder. Continue mixing. If you wish, you can add cinnamon to give the biscuits more flavor.
- Add yogurt and eggs. Mix well until a uniform dough is formed.
- Grease the baking sheet and shape the biscuits out of the dough. Place them far enough apart so that they do not spread on top of each other in the oven.
- When all the biscuits have been shaped, place the plate in the oven and bake at 200 ºC for about 20 minutes.
- Take the biscuits out of the oven, let cool and enjoy!
A few more tips
- Chia seeds or other seeds, or even chopped nuts and raisins, can be added to either recipe . They are especially suitable for the latter recipe.
- Note that these sugar-free oat-yogurt biscuits don’t rise much in the oven. The thinner you make them, the more crisp they are.
- While we recommend using unflavoured yogurt in your recipes, you can also choose flavored yogurt to make your biscuits even more delicious.
- You can also shape the dough into larger “pancakes” instead of biscuits, and eat them with some salty (ham, cheese, etc.) or anything else.
These sugar-free oat-yogurt biscuits are perfect for a snack or dessert, for example. Serve them with fruit for a healthy, tasty and nutritious snack.
